The strong flavor of the sausages still tasted nice with your average hotdog fixings. The seitan sausages were made from a couple combined recipes found by searching the internet with "smoked apple sage seitan sausage". I've made them before; they look like this.
The relish was actually just diced dill pickles, jarred some weeks ago. Next time I will dice in some red onion with the pickles. I also think a sweet relish would be nice to go along with the apple sausage.
